CAJUN CORN BREAD 
1 c. yellow cornmeal
2 eggs, well beaten
1/2 tsp. baking soda
3/4 tsp. salt
1 c. sweet milk
1 can cream style corn
1/2 c. bacon drippings
1 lb. ground meat, browned
1 lg. onion, chopped
1/2 lb. "rat cheese, " grated
4 jalapeno peppers, chopped

Mix first 7 ingredients and let stand. Saute meat in a small amount of bacon drippings. Grease a large skillet; sprinkle with meal. Pour half of the batter in the skillet; sprinkle with the cheese; then the meat, onion and jalapeno peppers. Add remaining batter. Bake at 350 degrees for 50 minutes.
