CAJUN DELIGHT 
3 tbsp. unrefined oil
1 c. raw brown rice
3 c. boiling water
2 tbsp. unrefined oil
1 clove garlic, minced
1 onion, chopped
1 bell pepper, chopped
1 stalk celery, chopped
1-2 jalapeno peppers, finely chopped
1/2-1 c. sliced mushrooms
1 c. tomato sauce
1/3 c. grated cheese

Heat a heavy skillet; add oil and rice; saute until golden. Add boiling water; cover and simmer for 30 minutes. Heat another skillet. Add the tomato sauce to the vegetables. Add the rice to the vegetables and simmer 5 more minutes. Top with grated cheese. Cover and steam until cheese is melted.
