JACKIE KENNEDY'S CHOCOLATE
MOUSSE
 
1/2 lb. semi-sweet chocolate
1 c. sugar
1/2 c. water
8 eggs, separated
2 tsp. rum or cognac

Melt chocolate in top of double boiler. Heat sugar and water; boil until syrupy. Add to chocolate, beating constantly. Add egg yolks one at a time, beating well. Remove from heat; add rum and cool.

Beat egg whites until soft peaks form. Fold into chocolate. Pour into molds and chill overnight. Serves 8.
