CHICKEN AND SHRIMP GUMBO 
1 (4-5 lb.) chicken
1 lg. onion, diced
1/4 c. chopped parsley
6 c. water
1 tsp. cayenne pepper
1 can whole tomatoes, chopped
2 tbsp. butter
1 c. sliced fresh or frozen okra
1 bay leaf
1 tsp. salt
1 tsp. pepper
1 1/2 lb. raw clean shrimp
1/2 c. diced celery

Cut chicken up. Saute chicken in butter until brown. Add water, onions, parsley, bay leaf, salt, peppers, and tomatoes. Cook for 45 minutes; skim broth. Add shrimp and okra and simmer for 20 minutes. Serve over rice. Corn, ham or oysters can be added if desired.
