MAMA'S CABBAGE SLAW | |
1 med. head cabbage 1 med. sized onion 1 c. vinegar 1 c. water 1 tsp. sugar Sprinkle of caraway seeds Finely shred cabbage and thinly slice a medium onion. Add onion to cabbage. Then salt, tossing the cabbage and onion so that the salt gets on all of it. Take a plate smaller than the bowl and rest it on top of cabbage. Place a heavy object on top of plate, to press down on cabbage and let stand for about 15 to 20 minutes. After such time, remove plate and take a handful of the cabbage and squeeze to get any liquid out. Put squeezed cabbage in another bowl. Follow this procedure until all the cabbage is squeezed. Next, take 1 cup of vinegar and add it to the cabbage and onion. Take 1 cup of water and also add it to the cabbage. Sprinkle 1 teaspoon of sugar over the cabbage as well as a sprinkle of caraway seeds. Mix all ingredients into the cabbage. Taste and if too sour, drain some of the vinegar and water off and add more water and taste again. This should do it. Sprinkle top of cabbage with pepper and serve or put it in the refrigerator until you serve it. |
