EGGPLANT PARMESAN 
1 eggplant
1 egg
Italian seasoned bread crumbs
1 jar Ragu spaghetti sauce
1 lb. spaghetti
Oregano
Pepper & salt
8 oz. Mozzarella cheese, shredded
1/2 c. Parmesan cheese

Slice 1 eggplant in 1/4 inch slices. Dip in egg, then Italian seasoned bread crumbs. Fry in oil until soft and crisp, but not burned. Grease casserole. Layer spaghetti sauce, salt, pepper, oregano, eggplant, Mozzarella cheese, Parmesan cheese and repeat.

The top layer should be cheese. Bake at 350 degrees for 30 minutes or until cheese is all melted. Serve over spaghetti.
