SPINACH BALLS 
3 crisply cooked bacon slices, crumbled
2 eggs, beaten
1 (10 oz.) pkg. frozen chopped spinach, well drained
1 c. seasoned stuffing mix or croutons
1/2 c. (2 oz.) Parmesan cheese
2 tbsp. soft butter
1/4 tsp. salt

Combine ingredients; mix well. Shape into 1 inch balls; place on ungreased cookie sheet. Sprinkle with additional Parmesan cheese if desired. Bake at 350 degrees for 10 minutes. 2 1/2 dozen.

Make ahead: Prepare recipe except for baking. Wrap securely; freeze. When ready to serve, bake unwrapped at 350 degrees for 15 minutes.
