SPINACH BALLS 
6 eggs
2 (10 oz.) pkgs. frozen chopped spinach, thawed, drained and squeezed dry
2 c. herb stuffing mix, Pepperidge Farm
1 lg. onion, grated
1 c. grated Parmesan cheese
1 1/2 sticks butter, melted
Salt and pepper
Dash of thyme

Beat eggs slightly n large bowl. Add remaining ingredients and blend well. Roll like meat ball. Transfer to baking sheet. Bake until golden, about 20 minutes, 350 degrees. Can be partially baked for 10 minutes and frozen.
