SPICED PUMPKIN BREAD | |
3/4 c. butter, softened 2 c. sugar 4 eggs 2 c. cooked or canned pumpkin 2/3 c. orange juice 2 tbsp. molasses 1 1/2 tsp. vanilla 3 1/2 c. flour 1 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon 3/4 to 1 tsp. ground cloves 1 c. raisins 1 c. chopped nuts In mixing bowl, cream butter and sugar. Add the eggs one at a time, beating well after each addition. Add the pumpkin, orange juice, molasses and vanilla. Combine dry ingredients. Add to the creamed mixture and mix until well blended. Stir in nuts and raisins. Pour into two greased and floured 9 x 5 x 3 loaf pans. Bake at 350°F for 65 to 75 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes. Remove from pans onto wire racks. |
