CREAMED TOMATOES ON TOAST 
1/2 c. heavy cream
4 tbsp. flour
2 c. cooked tomatoes or 1 lg. can crushed tomatoes, drained
1 stalk celery & leaves, diced very fine
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. sugar
6 slices toast
1/2 c. cheddar cheese, shredded

Whisk flour and cream until smooth. Simmer next 5 ingredients for 10 minutes. Remove from heat and add flour mixture. Mix. Return to heat. Cook 3 to 4 minutes. Ladle over toast. Sprinkle 1/6 of cheese on each. Place under broiler until cheese bubbles.
