CRUNCHY BROCCOLI AND CAULIFLOWER SALAD | |
1 lb. fresh broccoli 1 sm. head cauliflower 2 lg. carrots, sliced 2 sm. zucchini, sliced 1 red onion, sliced and separated into rings Wash and trim broccoli to make bite-sized flowerets. Wash cauliflower, remove stems and separate into flowerets. Combine broccoli, cauliflower, carrots, zucchini and onion in a large bowl. DRESSING: 2/3 c. mayonnaise 1/3 c. salad oil 1/2 c. salad vinegar 1/4 c. sugar 1 tsp. salt Combine dressing ingredients and add to vegetables. Toss until thoroughly coated. Chill several hours before serving. Serves 8. |
