MEATBALL ZUCCHINI SURPRISE 
Goes great over rice also!

1 lb. ground beef
1 lb. ground pork
3 tbsp. breadcrumbs
8 to 10 small zucchini
6 eggs, boiled, peeled and chopped
2 jars pasta sauce (your favorite)
Mozzarella cheese (I use low fat)
Parmesan cheese, for top

Mix ground meats. Add breadcrumbs and mix. Make small meatballs. Bake in oven at 350°F for 15 minutes. Set aside.

Slice zucchini. Add salt. Cover with plate using weight of can. Let sit 1-2 hours in refrigerator. Drain and dab with paper towels.

Roast zucchini in oven set at 425°F for 15-20 minutes until browned. If zucchini didn't brown you didn't remove all of the water.

Hard boil eggs, peel and chop. Use lasagna pan. Add sauce, meatballs, zucchini, chopped egg and Mozzarella cheese. Sprinkle top with Parmesan cheese.

Bake in 375°F degree oven for about 30 minutes or until top bubbles, do not cover.
