SOUTHERN HUSH PUPPIES 
Crisco oil for frying
3/4 c. yellow cornmeal
1/3 c. unsifted all purpose flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. buttermilk
1 egg
1/4 c. finely chopped onion

Heat 2-3 inches Crisco oil in deep fryer or large saucepan to 375 degrees. Meanwhile, mix cornmeal, flour, baking powder and slat in medium mixing bowl. Add remaining ingredients. Mix well. Drop batter by tablespoonfuls into hot Crisco oil. Fry a few at a time, 3-4 minutes or until golden brown. Drain on paper towels. Serve immediately or keep warm at 175 degrees. Repeat with remaining batter. Makes about 1 dozen hush puppies.
