TUNA - TATER CASSEROLE 
2 c. frozen hash brown potatoes
2 c. frozen mixed vegetables
2 cans (6 1/2 oz. each) chunk light tuna, drained
1 can (10 3/4 oz.) cream of potato soup, undiluted
1 container (8 oz.) dairy sour cream
1/2 tsp. onion powder
1 c. (4 oz.) shredded process American cheese
3 tbsp. butter, melted
3 c. Corn Chex cereal crushed to 1 1/2 c.

Coat shallow 2 quart baking dish with Pam vegetable cooking spray or with butter. In large bowl combine potatoes and mixed vegetables. Separate pieces with fork. Add tuna.

Combine soup, sour cream and onion powder. Add to potato mixture. Mix thoroughly. Turn into baking dish. Top with cheese.

Combine butter and Chex. Sprinkle over cheese. Bake in 350 degree oven 55-60 minutes or until vegetables are tender. Makes 8 servings.
