DIETETIC CAKE 
2 c. raisins, cooked in 2 c. water
1 c. unsweetened applesauce or fruit cocktail
2 tbsp. liquid sweetener
3/4 c. oil (vegetable)
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 1/4 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla

Drain raisins and reserve juice. Blend dry ingredients and stir into raisins. Add remaining ingredients including raisin juice. Mix well. Bake in 9 x 9 inch pan at 350 degrees until toothpick inserted in top comes out clean.
