STRAWBERRY AND SPINACH SALAD 
10 oz. fresh spinach, torn into bite size pieces (8 c.)
2 c. sliced fresh strawberries

SOUR CREAM DRESSING FOR FRUIT:

1/2 c. dairy sour cream
1/4 c. honey
2 tsp. lime juice
1/8 tsp. ground cardamom or nutmeg

Gently toss spinach and strawberries in salad bowl.

In small bowl, combine all dressing ingredients; blend well. Serve as dressing or toss into salad if desired. Garnish with shredded coconut. 8 (1 cup) servings.
