PUMPKIN MUFFINS 
1 1/2 c. whole wheat or white flour (or half of each)
1/2 c. sugar
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. cloves
1/2 c. raisins
1 egg, slightly beaten
1/2 c. milk
1/2 c. canned solid pack pumpkin
1/4 c. butter, melted

Put all of the dry ingredients together (the first seven items) into a large bowl. In another bowl combine the egg, milk, pumpkin, and melted butter.

Then add all of the wet ingredients all at once to the dry ingredients. Mix only until well combined. Fill greased or paper lined muffin pans two thirds full. If desired, sprinkle the muffins with a little sugar (or cinnamon sugar).

Bake at 400 degrees (preheated) for 20 to 25 minutes. Makes 1 dozen muffins.
