FIT'N FIBER MUFFINS 
2 eggs, beaten
1 1/3 c. nonfat milk
1/4 c. honey
1/4 c. vegetable oil
1/4 c. finely chopped onion
1 c. whole wheat flour
1 c. cornmeal
4 tsp. baking powder
1/2 tsp. salt
1/4 c. shelled sunflower seeds

In a medium mixing bowl, combine eggs, milk, honey, oil and onion. Add flour, cornmeal, baking powder and salt. Stir until moistened. Batter will be very thin. Spoon into well-greased or paper lined muffin cups 2/3 full. Sprinkle with sunflower seeds. Bake at 400 degrees for 18 to 20 minutes. Serves 12.
