HOT CHINESE - CHICKEN SALAD 
8 chicken thighs, skinned, boned, cut into 1 inch pieces (or an equivalent amt. of breast meat)
1/4 c. cornstarch
1/4 c. safflower oil
1/8 tsp. garlic powder
1 lg. tomato, cut in chunks
1/3 c. sliced water chestnuts
2/3 c. sliced mushrooms
1 c. sliced celery
1 c. coarsely chopped green onion
1/4 c. soy sauce
2 c. shredded iceberg lettuce

In addition to above ingredients, you may add chopped green pepper, pineapple tidbits, sesame seeds - any herbs that you desire. Roll chicken in cornstarch and quickly brown in hot oil. Sprinkle with garlic, add all other ingredients except the lettuce and stir. Cover, reduce heat, simmer 5 minutes. Add lettuce and toss. If desired, serve with rice.
