REFRIGERATOR ROLL DOUGH | |
6-6 1/2 c. all-purpose flour 1/2 c. sugar 2 tsp. salt 2 pkg. active dry yeast 2 c. hot tap water (105 degrees) 1/2 c. butter, softened 1 egg Salad oil Early in day or up to 1 week ahead: In large mixing bowl combine 2 1/4 cups flour, sugar, salt and yeast. Add butter. With mixer at low speed add water gradually. Add egg. Increase speed to medium; beat 2 minutes, occasionally scraping bowl with spatula. Beat in 2 cups of flour - or enough to make a thick batter. If your mixer has dough beaters use them now - add remaining flour and knead until smooth (5 minutes), otherwise stir in 1 more cup flour with a wooden spoon. Then place on floured surface and knead dough until smooth about 10 minutes. Shape dough into a ball. Place in a greased large bowl (about 1 1/2 tablespoons oil rubbed on bottom and sides of bowl), turning so top of dough is greased. Cover with towel, let rise in warm place until doubled, about 1 1/2 hours. Punch down with fist then pull sides to center. Turn dough over, brush top with oil. cover tightly with saran wrap and refrigerate, punching down occasionally until ready to use. About 2 1/2 hours before serving: Remove dough from refrigerator, prepare rolls into shape desired cover with towel and let rise until double (1 1/2 hours). Preheat oven to 425 degrees. Bake 15-20 minutes until golden brown. Serve immediately. Dinner Rolls: Roll out dough on lightly greased surface. Cut into rectangles, about 6 x 4 inches. Then cut at an angle in half (to make 2 triangle shapes). Brush with melted butter, roll up starting at wide end so top of triangle ends up in the middle of the roll. Let rise and cook as directed. Can make different sizes for sandwiches or smaller rolls. Cinnamon Rolls: Melt 1/2 cup butter. Add cinnamon to taste and 1/2 cup sugar; mix well. Roll out dough. Brush butter mixture on 1/2 of dough. Roll up dough, starting with butter and sugar end. Cut dough roll into 1 inch slices. Place in greased pans, leave room between rolls for them to rise. Let rolls rise and cook as directed. Freezes well. Can reheat in low oven or microwave set on medium power. |
