ROBERTA'S MEATBALLS | |
1 1/2 lb. ground beef (turkey) 1 c. bread crumbs & wheat germ 3/4 c. Parmesan, shredded 3/4 c. Romano, shredded 1/2 c. Swiss, shredded 1 tsp. salt 1/4 tsp. pepper 2 eggs, beaten 3/4 c. milk 3/4 c. chopped onion 1-2 cans cream of mushroom soup Milk Oil Rice Mix together beef/turkey, bread crumbs and wheat germ, 3 cheeses, salt, pepper, eggs, milk and onion; form into small balls. Brown on all sides in oil. Add more oil as needed and save drippings. Place meatballs in casserole dish. Combine soup, milk and drippings. Pour over meatballs. Cover and bake 45 minutes at 350 degrees. Bake 10 minutes, uncovered. Makes 20-24 meatballs. Serve over rice. |
