1/4 lb. butter
6 tbsp. sugar
1 egg, separated
1 tsp. vanilla
1/2 tsp. lemon extract
1 1/4 c. flour
1 tsp. baking powder
1/4 tsp. salt
Crushed nuts
Maraschino cherry pieces

Cream shortening; add sugar, egg yolk, and flavorings; mix well. Add dry ingredients and mix until dough can be handled, but is soft and smooth. A little more flour may be needed. Roll in small balls; dip in unbeaten egg white and then in crushed nuts. Place cherry piece in center. Bake in 350 degree oven about 10 minutes. Cookies should be light in color. Do not overbake.
