COCONUT CREAM PIE 
2 1/2 c. milk
3/4 c. sugar
1 stick butter
5 tbsp. flour
1 tsp. vanilla
1/2 tsp. coconut flavoring
1/2 pkg. Knox gelatin
1 c. flaked coconut

For chocolate pie omit coconut and coconut flavoring and stir in 1 cup chocolate chips.

Combine sugar, flour and gelatin. Mix until smooth and no clumps of flour remain (can sift).

Add 2 1/2 cups milk, stir until well combined. Cook until thickened over medium heat, stirring constantly. Add flavorings and let cool. Fold in coconut and pour in baked pie shell. This filling microwaves real well.

Since microwave ovens vary in power, you may need to adjust your cooking time.
