PUMPKIN BREAD | |
3 1/2 c. all-purpose flour 2 tsp. cooking soda 1 1/2 tsp. salt 1 tsp. nutmeg 3 c. sugar 1 tsp. cinnamon 1 c. Crisco oil 4 eggs 1 (#3) can pumpkin 1 c. chopped pecans 1 c. raisins (optional) Sift all dry ingredients together into mixing bowl; make a well in the center of the dry ingredients. Add oil, eggs, and pumpkin; mix just until smooth. Stir in nuts and raisins. Divide into 2 (9 x 5 x 3 inch) loaf pans, greased and floured. Bake at 350 degrees about 1 hour and 10 minutes or until bread tests done. Turn out on wire rack to cool. Can be frozen for convenient home use. Great for unexpected company. |
