CHERRY FILLED COFFEE CAKE | |
3 c. flour 1 tsp. baking powder 1 tsp. baking soda 1 c. sugar 1 c. butter 2 eggs, beaten 1 c. dairy sour cream 1 tsp. vanilla 1 can cherry pie filling In large bowl, combine first 4 ingredients. Cut in butter until crumbs form. Add eggs, sour cream and soda, mixing until smooth and creamy. Spread half of batter in a greased 9 x 13 x 2 inch pan. Spread pie filling evenly over batter. Drop remaining batter by spoonfuls evenly over cherries. Using 2 forks, spread batter lightly over cherries to cover. If some filling shows, that's ok. CRUMB TOPPING: 1/2 c. sugar 1/2 c.flour 2 tbsp. melted butter Combine ingredients, stirring with fork to make crumbs. Spread over batter and bake at 375 degrees for 40 minutes. |
