LITTLE CHEESECAKES 
30 vanilla wafers
2 (8 oz.) pkg. cream cheese, room temperature
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
Cherry pie filling

Preheat oven to 350 degrees. Place vanilla wafer in paper lined mini cupcake pan. Trim wafer to fit. Beat together cream cheese, sugar, eggs, lemon juice and vanilla for 5 minutes. Place 1 tablespoon of mixture on top of wafer and bake at 350 degrees for 15 minutes. Cool and spoon cherry pie filling on top.
