BAKED COUNTRY HAM 
10 to 12 lb. country ham

Cover ham with cold water and soak overnight. After soaking scrub to remove pepper coating and any mold. Place in roaster, add six cups water. Cover and bake 20 minutes in 500 degree oven. Turn off oven and leave for 3 hours. Turn oven on and leave ham in for 15 minutes at 500 degrees.

Turn off oven and allow ham to remain in oven another 3 hours or overnight. Remove rind and fat and it's ready to serve, glazed or not.
