WHOLESOME BANANA BREAD 
1 1/4 c. all-purpose flour
1/2 c. whole wheat flour
1 tsp. baking soda
1/4 tsp. salt

Mix in one bowl. 1/4 c. vegetable oil 1 egg (or 1 egg white) 1 c. mashed ripe bananas (2 med.) 1 tsp. vanilla extract Nuts and/or raisins of your choice and amount Vegetable cooking spray

Combine the first four ingredients and set aside.

Combine sugar and oil in medium bowl; beat at medium speed with electric mixer 2 minutes or until well blended. Add egg (white) and beat until blended.

With mixer at low speed, add flour mixture alternately with bananas, beginning and ending with flour mixture. Blend well after each addition. Stir in vanilla.

Careful not to overmix or let batter stand before baking; this will cause bread not to rise properly.

Pour batter into loaf pan coated with cooking spray; bake at 350 degrees for 45 minutes or until wooden pick comes out clean. Cool 15 minutes in pan on wire rack; remove from pan and let cool completely. (120 calories/slice)

This is a delightful bread for breakfast or snacking and it's low in cholesterol too!
