EASY CHICKEN PARMESAN 
4 boneless skinless chicken breasts (pref. marinated in garlic)
1 (28 oz.) can spaghetti sauce (I use Hunts roasted garlic)
2 cloves fresh garlic
finely chopped onion
a substantial amount of Parmesan cheese (fresh or pre-packaged)
extra virgin olive oil (EVOO)
1 tsp. salt

Preheat oven to 350°F. Put chicken breasts into a casserole dish or baking pan and spread very little olive oil on top. Put in oven at 350°F until you have about 15-20 minutes left to cook.

While they are cooking sweat olive oil, salt, minced garlic and chopped onion in a small skillet. Then pour into a saucepan with a large can of spaghetti sauce. Bring this to a good boil.

When chicken breasts have about 15-20 minutes left, pull them out of the oven and completely cover with sauce. Then take grated Parmesan cheese and spread over the top as you like. Put back in oven to brown.

Serves great with fresh garlic bread and a salad of your choice.
