DUTCH SAND COOKIES 
1 c. butter
2 1/2 c. sifted flour
1/2 c. sugar
1 tsp. vanilla
1 sm. jar apricot jam
Powdered sugar frosting

Preheat oven to 350 degrees. Sift flour and sugar together. Mix and knead all ingredients well. Roll out. Cut out rounds with about a 2 1/2 inch glass. Bake at 350 degrees for 10-15 minutes. Must be very light in color. When completely cooled frost 1/2 of the cookies with powdered sugar frosting. Put 1/2 red cherry on center top of each. Just before serving put apricot jam between 2 cookies.
