APPLE BREAD 
3 c. all-purpose flour
2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. vegetable oil
2 c. sugar
2 eggs, beaten
2 tsp. vanilla
2 c. apples, peeled, cored and coarsely chopped
1 c. broken walnuts

In bowl, combine flour, cinnamon, baking soda, baking powder and salt; set aside. In large bowl place oil, sugar, eggs, vanilla and apples, mix well. Stir into flour mixture. Add walnuts and mix. Divide mixture between two greased 8-inch loaf pans. Bake at 350 degrees for 40-45 minutes or until bread tests done. Cool 10 minutes on wire rack before removing from pan. Yields two loaves.
