APPLE BREAD 
3 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
2 c. sugar
1/2 tsp. vanilla
1 c. walnuts, broken
2 tsp. cinnamon
1/2 tsp. baking powder
1/2 c. vegetable oil
2 eggs, beaten
2 c. apples, peeled, 1 cored, coarsely chopped

In bowl combine flour, cinnamon, baking soda, baking powder and salt; set aside. In large mixing bowl, place oil, sugar, eggs, vanilla and apples. Stir into flour mixture. Add walnuts and mix.

Divide mixture between 2 greased 8x4 inch bread pans. Bake at 350 degrees for 40-45 minutes or until breads test done. Cool for 10 minutes on wire rack before removing from pans.
