BROCCOLI - CHEESE SOUP 
2 1/2 c. fresh broccoli, chopped (if frozen is used, thaw first)
3/4 c. onion, chopped
3 tbsp. butter
3 tbsp. flour
1 can chicken broth, 1 c. milk
1 c. shredded Cheddar cheese (or a mix of cheeses works well)
dash of pepper

In a large saucepan, cook and stir onions in butter approximately 2 minutes. Stir in flour. Add broth and milk. Stir well. Add broccoli. Heat and stir until mixture boils. Cook and stir 1 minute if frozen broccoli is used, 5 to 6 minutes if fresh broccoli is used. Add cheese and pepper until cheese melts. Makes 4 cups.
