6-8 bunches mustard greens 2 lbs. salt pork 1 tbsp. crushed red pepper Lawry's seasoning Salt to taste 1 med. size onion Pick greens and wash them at least 8 times until all grit is gone. Break greens into smaller pieces. Cut salt pork into cube-like pieces; wash it. Now place in a pot of water, just to cover the top of meat. Boil about 10 minutes. Pour off water. Cook over low heat (fry) until meat is slightly brown. Place greens on top of meat; cut onion up and place it on top of greens. As greens make its own water, adjust stove. Cook about 2 1/2 hours. |
