STUFFED GREEN PEPPERS 
6 lg. green peppers
1 lb. ground turkey
1/2 c. chopped onion
2 c. tomato sauce
3 oz. uncooked instant rice
6 oz. shredded sharp cheddar cheese

Cut off tops of green peppers and remove seeds. Pre-cook green peppers in boiling water 5 minutes and drain. Brown ground turkey and onion. Drain well. Add tomato sauce, rice and pepper. Cover and simmer until rice is almost tender, about 5 minutes. Stand peppers upright in baking dish. Pat 1/2 ounce of cheese in bottom of each pepper and fill with meat mixture. Bake at 350 degrees for 25 minutes uncovered. When done put 1/2 ounce cheese o top of each pepper.

Each serving has 3 proteins, 1/2 bread, 3 vegetables, and 10 calories optional for Weight Watchers. 6 servings.
