SPINACH SALAD 
1 lb. fresh spinach
1/2 lb. bacon, crisp and crumbled
1/2 lb. mushrooms
2 hard boiled eggs, chopped
5 scallions, including green, chopped
3/4 c. garlic croutons

DRESSING:

1/2 c. mayonnaise
2 tsp. hot mustard
1/4 c. lemon juice
1/2 c. olive oil
1 tbsp. tarragon vinegar
1/8 tsp. sugar
Salt and pepper to taste
