HIGH ENERGY HIKING COOKIES 
1 c. honey
1/2 c. butter, melted
2 tbsp. orange juice
1 tsp. lemon juice
1/4 c. wheat germ
1/4 c. whole wheat pastry flour
2 c. rolled oats
1/2 c. pecans
3/4 c. coconut
1/2 c. ground almonds
1/2 c. ground cashews
1/4 c. ground raisins
1/4 c. apple juice (or grape juice)
1/2 tsp. vanilla
1/2 tsp. kelp powder
1/4 tsp. cinnamon

Combine all ingredients in a large bowl and mix with the hands until completely smooth. Line a 13 x 9 inch baking pan with kitchen parchment, then press dough into dish. Bake at 350 degrees for 20 to 25 minutes. Remove and cool 5 minutes, then cut while still warm. Store lightly covered.

Serving suggestion: This cookie is so rich it can be served as a candy by cutting in smaller pieces and rolling in cocoa powder or coconut. Makes 15 bars.
