CAULIFLOWER CHEESE SOUP 
1 sm. head cauliflower, broken into flowerets
1 carrot, grated
1/4 c. chopped celery
2 chicken bouillon cubes
3 c. water
3 tbsp. butter
3 tbsp. flour
3/4 tsp. salt
1/8 tsp. pepper
2 c. milk
1 c. grated Cheddar cheese, 4 oz.

Combine cauliflower, carrot, celery, bouillon cubes and water in large saucepan. Bring to boil. Reduce heat, cover and simmer 20 minutes or until vegetables are tender.

Meanwhile in small saucepan melt butter, blend in flour, salt and pepper. Add milk and cook stirring until boiling. Add cheese; cook and stir just until it melts Stir cheese sauce into cauliflower mix.
