ZUCCHINI BREAD 
1 1/2 c. brown sugar
3 eggs
3/4 c. vegetable oil
2 tsp. vanilla
2 c. grated zucchini
3 c. flour
1 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. baking powder

Beat eggs and sugar until well blended. Add oil, vanilla and zucchini, mixing well. Add dry ingredients and blend. Can add 1/2 cup chopped nuts and 1/2 cup raisins. Grease and flour one 9 x 5 x 2 1/2 inch loaf pan or three 7 1/2 x 3 1/2 x 2 inch loaf pans.

Bake large loaf at 350 degrees for 1 hour or small loaves at 350 degrees for 45 minutes. Test with toothpick in center of loaf. Cool 5 minutes in pan, turn out on rack. Cool completely before slicing.
