SQUASH CASSEROLE 
1 c. fine dry bread crumbs
1 c. shredded cheese, Gruyere or Cheddar, divided
4 c. yellow squash
1 sm. onion, sliced and separated into rings
2 tbsp. butter
2 eggs
1/2 c. sour cream or mayonnaise
1/4 c. minced fresh parsley
1 tsp. dried basil leaves
1/4 tsp. red pepper

Toss bread crumbs and 1/2 cup cheese. Pat half of mixture into bottom of dish. Reserve remaining bread crumb mixture. Saute squash and onion in butter until tender. Remove from heat and cool. Beat together eggs, sour cream or mayonnaise, parsley, basil, red pepper, and remaining 1/2 cup cheese; stir into squash, mixing well.

Pour squash into dish; sprinkle remaining bread crumb mixture on top. Bake at 350 degrees for 25 to 30 minutes.
