SQUASH CASSEROLE 
1 lb. squash
1/2 c. mayonnaise
1 egg
1/2 c. chopped onion
1 tbsp. sugar
1/2 stick butter
1/2 c. shredded cheddar cheese
1/2 c. buttered Ritz cracker crumbs

Lightly salt squash and onions. Cook in saucepan until tender. Drain if necessary. Add butter to hot squash. Mix sugar, egg and mayonnaise. Add to squash.

Pour into buttered or Pam sprayed 9 inch round pie plate. Sprinkle shredded cheese over casserole. Top with buttered crumbs. Bake about 30 minutes at 350 degrees.
