UNCOOKED PEACH JAM 
2 c. peaches, mashed
3 tbsp. lemon juice
1 pkg. powdered pectin and 1 c. water (or 1/2 bottle liquid pectin)
4 c. sugar

Mix peaches, lemon juice, and sugar. Let stand 20 minutes, stirring occasionally. If using powdered pectin, combine pectin and water; bring to a boil and boil 1 minute, stirring constantly. Add pectin to peaches and sugar. Stir about 2 minutes. Pour into clean jars. Cover with lids or aluminum foil. Let stand at room temperature for 1 hour. Refrigerate until set. Store in the refrigerator or freezer.
