JOHANNA'S PEACH JAM 
4 lbs. ripe fresh peaches, chop coarsely
1/4 c. fresh lemon juice, blend with fruit
6 c. mild flavored honey
1 pkg. powdered fruit pectin

Measure fruit to equal 4 full cups. Place fruit and juice in large saucepan. Add pectin; mix well. Place over heat. Bring to boil stirring constantly (oil rim of saucepan; won't boil over).

Oil measuring cup; measure honey. While fruit is boiling, stir and slowly pour in honey, blending well. Stir and boil. When mixture cannot be stirred down, boil exactly 4 minutes. Remove from heat.

Alternate skim and stir for 5 minutes to cool and keep fruit from floating. Pour into sterile glasses and seal. Makes 10 (6 ounce) glasses.
