SMOTHERED FRESH PORK SLICES | |
2 1/2 lb. pork butt 4 tbsp. flour 1/2 tsp. salt 2 tbsp. fat 4 sm. chopped onions 1/4 c. chopped green pepper 1/4 c. water 1/4 c. tomato juice Trim excess fat from pork. Cut into 1/2 inch thick slices. Dredge in salted flour. Brown in fat. Place in a roasting pan, slightly overlapping fat edge of slices. Place peppers and onions on each slice. Combine water and tomato juice and pour over pork. Bake at 350 degrees for 1 1/2 hours until meat is tender. Serves 6. |
