IRISH SODA BREAD
4 c. sifted flour (sifted before measuring)
1/2 c. sugar
1 tsp. baking powder
1/4 c. butter
1 c. raisins
1-2 tsp. caraway seeds (to taste)
1 1/2 c. fresh buttermilk
1 beaten egg
1 tsp. baking soda

Mix flour, sugar, baking powder; add butter and blend coarsely but evenly with fork or blending tool. Add raisins and caraway; mix buttermilk, egg, soda and add to batter. Mix with large spoon (batter will be sticky).

Bake at 350 degrees about 1 hour in greased 9-inch pie pan. Round loaf. Crust will be golden brown. If your oven is hot, watch baking time and do not overbake. Very good sliced hot and buttered, as well as toasted. Good with any meal.
