MUSHROOM - STUFFED EGGS 
6 hard boiled eggs
1/4 c. minced fresh raw mushrooms
1 tbsp. mayonnaise
1 tsp. Dijon mustard
Salt and pepper
Minced parsley
Dash cayenne pepper

Halve the eggs lengthwise. Remove yolks and mash them in a bowl with the mushrooms, mayonnaise, mustard, salt and pepper to taste, and dash of cayenne. Stuff the mixture into the egg whites and sprinkle with minced parsley. Pack closely together in an airtight container. Serves 12.
