GERMAN POTATO SALAD 
2 1/2 to 3 lbs. red potatoes
1 med. onion
2 to 3 stalks celery
1 green pepper
1/2 lb. bacon

SAUCE:

3 tbsp. flour
1 1/4 tsp. salt
1/2 c. plus 2 tbsp. sugar
1/2 c. vinegar
1 c. water

Cook potatoes. Chop onion, celery, green pepper and add vegetables to cooked potatoes. Fry bacon until crisp and chop into fairly large pieces. Pour over the potatoes, include some of the grease.

SAUCE: Mix flour, salt, sugar, vinegar, water and cook over medium heat until thickened. Pour over potatoes and vegetables. Serve hot. 6 servings.
