1 c. chopped parsley 1/2 c. cracked wheat 1 chopped tomato 1 chopped cucumber 3 cloves minced garlic 2 tsp. dried mint or more if fresh is used Juice of 1 lemon 1/4 c. olive or other oil Place cracked wheat in bowl with 1 1/2 cups boiling water. Let soak for 15 minutes. In large bowl combine remaining ingredients. Drain cracked wheat discarding leftover water. Add and mix ingredients once more. Serve with romaine lettuce leaves as a salad or with pita bread as a sandwich or appetizer. |
