CREOLE SAUCE 
3 tbsp. fat
1/2 c. finely chopped green peppers
1/2 c. finely chopped onion
1 clove garlic, finely chopped (optional)
2-1/2 c. stewed or canned tomatoes
1 tsp. chili powder
1 tsp. sugar
Small bay leaf
1/8 tsp. ground cloves
1 tsp. salt
1/4 tsp. pepper

Heat fat in heavy skillet. Add green peppers, onion and garlic. Simmer about 5 minutes or until soft. Add remaining ingredients and continue cooking over low heat 40 to 50 minutes or until thick.
