GREEN TOMATO BREAD 
1 c. oil
3 eggs, beaten
2 c. sugar
2 tsp. vanilla
2 c. ground green tomatoes
3 c. flour
1 tsp. baking soda
1 tsp. salt
1/4 tsp. cloves
1/2 tsp. baking powder
2 1/2 tsp. cinnamon
1/4 tsp. nutmeg
Nuts & raisins (opt.)

Stir together oil, eggs, sugar, vanilla and green tomatoes. Sift together remaining ingredients. (Pumpkin pie spice can be used instead of the cloves, cinnamon and nutmeg, but only 2 1/2 teaspoons.) Add dry ingredients, then pour batter into two well greased loaf pans (I like to line my pans with wax paper). Bake at 325 degrees for 1 hour.

For variation, use only 1 1/2 cups green tomatoes and add 1/2 cup grated apples or 1/2 cup crushed pineapple.
